Rice Upma


Ingredients:

  • Rice kurunai  - 1 cup
  • Dry red chilli - 5 to 6 nos
  • Oil - 2 tblspn
  • Curry leaves - few nos
  • Coconut oil - 1 to 2 tspn
  • Mustard  - 1/2 tspn
  • Channa dal - 1/2 tspn
  • Urad dal - 1/2 tspn
  • Peanut - 1 tspn
  • Grated coconut - 1 tblspn ( optional )
  • Asafoetida powder - 2 pinch
  • Salt - to taste
Method:
  • I used parboiled rice it is readily available in shop
  • Heat oil in a pressure cooker, add mustard after it pops out add channa dal,urad dal,after the dal turns golden brown add peanut, grated coconut, asafoetida powder, curry leaves and saute well
  • Then add 3 cups of water after it starts to boil add 1 cup rice kurunai , salt and close the pressure cooker and cook for 3 to 4 whistle
  • After pressure released open the lid add 1 to 2 tspn of coconut oil and mix well
  • Serve the tasty rice upma along with brinjal tamarind gotsu http://ananya-kitchens.blogspot.in/2014/05/brinjal-tamarind-gotsu.html  as side dish
