Ingredients:
- Tamarind - lemon size
- Brinjal - 2 nos (medium size )
- Onion - 2 nos ( large one )
- Coriander leaves chopped - 1/4 cup
- Green chilli - 6 to 8 nos
- Oil - 1 tblspn
- Mustard - 1 tspn
- Asafoetida powder - a pinch
- Salt - to taste
Method:
- Wash and pat dry the brinjal , then with help of fork or needle prick holes all over the brinjal and then apply oil ( with the help of these holes brinjal cooks fast )
- Keep it directly on fire ( not on any vessel )
- After the skin shrinks completely it indicates that the inner pulp cooked
- Then peel the skin and chop the inner part in to very fine pieces and keep aside
- Squeeze the tamarind and take thick juice from it, add water according to the consistency needed
- Heat 1 tspn oil and fry the green chilli well , cool down and then grind it to fine paste
- Add the chopped brinjal, salt, green chilli paste coriander leaves and mix well
- Heat remaining oil in the kadai, add mustard after it pops out switch off the stove , add asafoetida powder and pour on to the brinjal,tamarind mixture
- Mix all the content well check for the taste
