Ingredients:
- Pasta - 2 cups (my cup measures 240ml )
- Red chilli paste - 1 to 2 tspn
Red chilli paste:
In a boiling water add dry red chillies keep in low flame for 5 mins after that grind the red chillies to paste
- (Chopped beans, carrot, onion, capsicum,
- tomato (without pulp),cabbage) - 1 1/2 cup ( altogether)
- Soya sauce - 1/2 tspn
- Garlic - 3 pods
- Spring onion - for garnishing
- Tomato sauce - 1 tspn
- Vinegar - 1 tspn
- Salt - to taste
- Oil - 3 tblspn
Method:
- Chop all vegetables in same shape
- Cook the pasta in boiling water along with 1 tspn oil and salt
- Then filtered it wash in cool water and add 2 tspn of oil , mix them( by adding oil it will not stick to each other ) and keep it aside
- Heat 2 tblspn on oil in a kadai, add chopped onion, garlic saute it then add tomato
- After tomato cooks add beans, carrot, capsicum, cabbage , salt and saute it till all vegetables cooks well
- Then add soya sauce, tomato sauce and vinegar mix and saute for 2 mins, add chilli paste (depends on spiceness )
- Saute the ingredients for few more mins then add cooked pasta mix well till the pasta coated with the masala
- Keep in low flame for 2 mins or keep in high flame with constant stirring
- After the pasta mixed with the masala swich off the stove
- Serve the yummy Szechuan pasta with spring onion garnishing
