Ingredients:
- Sooji - 1 cup (my cup measures 120ml)
- Sugar - 1 cup and 2 tspn (if want more sweet add 1 and 1/4 cup
- Cardamon powder - a pinch to 1/4 tspn
- Yellow or red food colour - a pinch
- Ghee roasted cashew - 1 tblpsn
- Ghee roasted kismiss - 1 tspn
- Ghee - 2 to 3 tblspn
- Water - 2 cups
Method:
- Heat 1 tspn ghee and roast the cashew and kismiss and keep it aside
- To the same kadai add 1 tspn ghee and roast the sooji (till smell comes out )
- Then boil 2 cups of water and add roasted sooji care should be taken to see clumps are not formed
- After sooji cooked add sugar when sugar completely melts , add 1 tblpsn ghee and food colour
- when the mixture becomes thick add more ghee , cardamon powder and fried cashew and kismiss
- When kesari comes without touching the sides of the vessel switch off the stove
- Serve the yummy sooji kesari hot with little ghee on top.
