Health Benefits of Red Rice:
Red rice is rich in fibre
It reduces the possibility of heart diesease
It helps to maintain the blood sugar level
Helps in digestion
Reduces the constipation
Some medical test indicates that it control the high blood pressure
It nutrients like B vitamins, selenium, iron and manganese
Ingredients:
- Red rice - 1 Cup (200gms)
- Moong Dal - 1/2 Cup (100gms)
- Coconut milk - 1/2 Cup (optional )
- Pepper - 2 - 21/2 tspn
- Jeera - 11/2 tspn
- Ginger Chopped - 1 tspn
- Asafoetida Powder - 1/4 tspn
- Curry leaves - few nos
- Ghee - 1 tblspn
- Oil - 3 tspn
- Salt - to taste
- Ghee fried Cashew - 1 tblspn
Method:
- Soak the red rice in water for 30 mins. Then filtered it and grind it in mixie stop grinding when it becomes little bit bigger than sooji size
- Take 4 1/2 cups of water ( same cup measuring the rice ) in a cooking vessel add broken rice moong dal and salt and pressure cook for 8 to 10 whistle
- Then switch off the stove. Powdered the pepper and jeera
- Heat 2 tspn of ghee and oil in a kadai add cashew when it turns light brown add curry leaves and asafoetida powder, then add pepper jeera powder and saute it for few seconds.
- Pour this seasonings to the cooked rice and moong dal and mix well along with salt if required ( if you are using coconut milk add at this stage and keep in low flame for few mins. Coconut milk will go nice with the brown rice )
- Add the remaining ghee to the Pongal and serve hot along with coconut chutney
