Ananya's Broken Wheat Tomato Brinji





Ingredients:

  • Broken wheat - 11/2 cup
  • Chopped Tomato - 2 cups
  • Tomato - 1 no for garnishing
  • Chopped Onion - 1 cup
  • Cooked Peas - 1/2 cup
  • Green chillies - 4 nos ( 2 for garnishing)
  • Chilli powder - 1 tspn
  • Turmeric Powder - 1/2 tspn
  • Garam Masala - 1/2 tspn
  • Ginger Garlic Paste - 1 tspn
  • Cinnamon - 1 medium stick
  • Cardamon - 2 nos
  • Cloves - 2 nos
  • Bay leaf - 2 nos
  • Ghee - 2 tspn
  • Oil - 100ml
  • Cashew nuts - 1/4 cup
  • Mint leaf - 1 tspn
  • Salt - to taste
  • Water - 21/2 cups
Method:
  • Fry the broken wheat in 1 tspn of oil and keep it aside.
  • Heat oil in pan, add cinnamon, cardamon, bay leaf, cloves after 2 mts add chopped onion and saute it
  • When onion cooked add ginger garlic paste fry until raw smell goes, to this add turmeric powder, chilli powder and garam masala
  • Saute the mixture for 2 mts , then add tomato mix well and let it cook until oil comes out, now add 21/2 cups of water and salt 
  • When water starts to boil add the broken wheat slowly by constant stirring , then close the lid for 5 mts
  • Serve the hot and tasty broken wheat tomato brinji with ghee fried cashew and mint garnishing
  • Onion, carrot raitha is best combination
