Ingredients:
- Brinjal - 1/4 kg
- Onion - 1 big
- Chopped Ginger - 1 tspn
- Chopped Garlic - 11/2 tspn
- Chilli Powder - 11/4 tpsn
- Turmeric Powder - 1/4 tspn
- Dhania Powder - 11/2 tspn
- Fennel Seeds - 1/2 tspn
- Curry Leaves - few
- Coriander Leaves - few
- Pepper Powder - 1/2 tspn
- Salt - 1 tspn ( according to taste )
- Oil - 5 to 6 tspn
Method:
- Cut the Brinjal vertically (not so thick)
- Heat oil in a pan add fennel seeds, curry leaves, chopped onion, ginger, garlic and brinjal, fry them until brinjal cook well (when brinjal becomes shrinks and crispy)
- When brinjal cooked add chilli powder, dhania powder, turmeric powder, salt and mix them well and just sprinkle little water, keep it in fire for 3 to 5 mins
- Add pepper powder, coriander leaves and serve crispy and tasty brinjal fry
