Ananya's Spicy Brinjal Masala
Ingredients:
Brinjal - 11/2 cup
Onion - 1 cup
Tomato - 1/2 cup
Turmeric powder - 1/4 tspn
Chilli powder - 1 tspn
Ginger garlic paste - 2 tspn
Cinnamon stick - 1 small
Fennel seeds( sombu ) - 1/4 tspn
Coriander leaves - 4tspn (according to taste)
Salt - 11/2 tspn ( According to taste )
Oil - 3 tblspn
Water - 1/4 cup
Method:
Heat oil in the kadai and add fennel seeds ,cinnamon stick, to this add onion and fry until it turns brown
Then goes ginger garlic paste and tomato saute nicely until the smell goes
To this add turmeric powder, chilli powder and salt
Now add brinjal and pour some 1/4 cup water, close the lid for 5 to 10 mts.
After brinjal cooked add coriander leave and serve
