Ingredients:
- Bitter Gourd - 2 Cups
- Besan flour - 1/4 cup
- Rice flour - 1 tblspn
- Ginger garlic paste - 1 tspn
- Fennel powder - 1 tspn
- Chilli powder - 1 tspn ( depends on spicyness )
- Garam masala - a pinch
- Salt - to taste
- Oil - for deep fry
Method:
- Buy 2 inch small size bitter gourd wash it then cut vertically and take out the seeds, after that chop as thin slices
- Heat oil in a kadai
- Take the chopped bitter gourd in a plate add salt , ginger garlic paste and mix it with the hand nicely it will ooze out water then add besan, rice fllour, fennel , chilli powder, garam masala powder and mix well
- Check for the salt, take some amount of the mixture in the hand and drop it in the hot oil
- Try to drop as individual slices, don't over crowd it
- When it turns golden brown or crispy take it out and repeat the process for the remaining mixture
- Serve this crispy - tasty bitter gourd varuval as side dish for sambar, rasam and curd rice
Note:
- Keep the stove in low flame, then only it will become crispy otherwise
- Don't chop the bitter gourdin to thick slices
- If you don't get small size bitter gourd then slice the big one and then cut it into 2 inch size
