Szechuan Noodles



Ingredients:

  • Plain noodles (cooked) - 2 cups
  • Beans - 5 nos
  • Carrot - 1 large
  • Capsicum - 1 small
  • Onion - 1 large
  • Garlic and ginger finely chopped - 1 tspn each
  • Soya sauce - 1/2 tspn
  • Chilli garlic sauce - 1/2 tspn (optional)
  • Chilli paste - 2 tspn or more depends on spicyness required
  • Tomato sauce - 1 to 2 tspn
  • Vinegar - 1 tspn
  • Spring onion - for garnishing
  • Salt - to taste
  • Oil - 2 tblspn

Method:

  • Boil water add noodles along with 2 tspn oil and salt, after 3 to 5 mins filtered it and keep in a plate by applying little oil 
  • Heat oil in a kadai, keep in high flame add onion, garlic, ginger and saute, then add all vegetables  keep in low flame till the vegetables cooks
  • After that add soya sauce, chilli paste, tomato sauce, vinegar and mix well
  • Add salt for taste and check it
  • Saute the mixture in high flame for 2 mins, then transfer it to a plate garnish with spring onion 
  • Serve the szechuan noodles hot
