Ingredients:
- Brinjal - 250 gms
- Ginger garlic paste - 1 tspn
- Cloves and Cinnamon - 1 each
- Garam Masala - 1 tspn
- Oil - as required
- Salt - to taste
For Dry Powder:
- Pepper - 1 tspn
- Jeera - 1 tspn
- Sauf ( sombu ) - 1tspn
- Dhania - 1 to 11/2 tspn
Fry all the above said item in empty pan and make in to powder
For Grinding:
- Onion - 2 medium size( chopped)
- Tomato - 1 large size(chopped )
- Turmeric Powder - 1/4 to 1/2 tspn
- Chilli Powder - 1 tspn ( or according to spiceness )
Fry all the onion and tomato with 1tspn oil and grind in to paste along with turmeric and chilli powder
Method:
- First chop the brinjal in cube size and fry in oil until it cooks or turns light golden brown and keep it aside
- Heat 3 tblspn of oil in a kadai and add cinnamon and cloves, after it burst add 1/4 tspn jeera when it pops out add ginger garlic paste and saute for 2 mts, then add the onion tomato paste and saute it
- After few mins add dry powder and mix nicely. When oil starts to separate out add the fried brinjal mix well with the masala, add salt and close the lid for 5 to 10mins.
- Serve the spicy brinjal curry hot with coriander garnish..
