Ananya's Simple and Tasty Rice Sevai



Ingredients:


  • Idli Rice - 5cups
  • Urad Dhall - 1 tspn
  • Salt - 2 tspn
  • Hot Water - 1 to 2 litre ( until the rice fully covered with water )


Method:


  • Wash the rice thoroughly and soak it in hot water for 4 hrs along with urad dhall
  • Then grind it nicely in wet grinder ( how we grind for dosai or idli )
  • Add salt to the grinded mixture ( if you grind it in night keep it overnight in tupperware  or you can use immediately also )
  • In Idli making vessel pour this flour in each idli making plate and allow to cook
  • When you insert spoon in the middle of the mixture it should be non sticky that shows it cooked
  • ( if it is stickly keep it for some more mts )
  • Put this idlis in the sevai making machine ( in tamil sevai nazhi ) and make long thread like sevai
  • Plain sevai ready to eat 

Lemon Sevai :

  • In a pan heat gingelly oil or sesame oil add mustard seeds, broken urad dhall, a pinch of asafoetida powder, turmeric powder, chopped green chillies, curry leaves and add this mixture to the prapared plain sevai
  • Then add lemon juice and salt according to the taste
Dhall Sevai or Paruppu Sevai :

  • Take 1 cup of toor dhall, 2 tspn of chenna dhall , 2 tspn of urad dhall and soak in water for 1 hr
  • Then grind this mixture in the mixie 
  • Cook this mixture in idli plate as mentioned above
  • Make it as small nice powder without any clumps by smashing with hand or whip once in mixie
  • Heat 2 tablespoon of oil in kadai and add mustard seeds, 1/4 tspn broken urad dhall, asafoetida powder ,
  • 2 tspn red chilli powder, salt and mix well
  • Add this mixture to the plain sevai and mix well 
Coconut Sevai :

  • Heat 2 tablespoon oil in a pan and add 2 tspn mustard seeds, 3 tspn urad dhall, 4 dried red chillies slightly chopped, 1 tspn asafoetida powder, 3/4 to 1 cup grated coconut , few curry leaves and saute it nicely
  • Then mix this along with the plain sevai and add 1 to 2 tspn coconut oil and serve 
Sweet Sevai :

To the Plain sevai add desire amount of sugar and freshly grated coconut ( 1/2 cup coconut 1/2 cup sugar ) and serve ( if need you can add 2 tspn of ghee also )
 
Pepper Sevai :

To  1 cup of plain sevai add 1 tspn of pepper powder, 1/4 tspn of salt and 1 to 2 tspn of ghee and serve
