Ingredients:
Drumstick - 3 nos
Brinjal - 1/4 kg
Chopped Small Onion - 200g
Chopped Tomato - 150g
Pudina ( Mint ) - 8 to 10 leaves
Curry leaves - 4 nos
Fennel seeds - 1/4 tspn
Chopped Ginger - 1 tspn
Chopped Garlic - 1 tspn
Chilli powder - 2 tspn
Turmeric powder - 1/4 tspn
Coriander powder - 3 tspn
Salt - 11/4 tspn ( according to taste )
Grinded Coconut - 1/2 cup
Pepper powder - 1tspn
Oil - 5 to 6 tspn
Water - 11/2 to 2 cup
Coriander leaves - For garnishing
Method :
Heat a pan with oil , to this add fennel seeds, curry leaves and pudina ( mint ) leaves and saute them
After sauting add onion and saute it until it turns brown, then add chopped ginger and garlic
To this add tomato and saute nicely until tomato smashed, now add 2 tspn chillipowder, 3 tspn coriander powder, 1/4 tspn turmeric powder , salt and mix it thorougly leave it for 2 to 3mts when it start emit oil add diced brinjal and drumstick.
Add water for the vegetable to cook,( make sure vegetable completely covered with water )
Once the vegetable cooked add coconut paste and pepper powder
Garnish with coriander leaves and serve.
Now... Chettinad Drumstick and Brinjal Masala.. Ready....
