Ananya's Simple Veg Briyani



Ingredients:


Basmathi Rice - 300 gms
Onion    - 150 gms
Tomato - 150 gms
Potato - 100 gms
Carrot - 100 gms
Beans, Peas,Corn - Each 25 gms
Chilli Powder - 1 1/2 tspn
Turmeric Powder - 1 tspn
Salt - 2 tspn ( according to taste )
Curd - 2 tablespoon
Ginger garlic paste - 2 or 3 tpsn
Green Chilli - 2 nos
Mint leaves - 1/2 cup
Coriander leaves - 1/2 cup
Oil - 75 ml
Ghee - 2 tablespoon
For Seasoning:
Cinnamon - 1 strip
Clove - 1 no
Cardamon - 1 or 2
Brinji leaf - 1 small
For Garnishing:
Ghee fried Cashew nuts
Ghee fried bread pieces
Fresh mint and coriander leaves ( if want )

Method:


Wash and drain water from the rice and keep it aside for 20 minutes
Cut the vegetables at what shape you want cubes or vertical
Heat oil and 1 tspn ghee in the pressure cooker, add seasonings, fry onion till brown
Add  Ginger garlic paste and fry till the raw smell goes
Now add tomato, chilli powder, turmeric powder, salt and half of coriander and mint leaves and fry till the tomato cook well
After tomato cooked add the above said cut vegetables and thoroughly mix .
Keep it 5 mts for the vegetales to cook, then add 2 tablespoon curd and leave that for 5 mts
Then add water 11/2 times then the rice and allow to boil
Once it starts boil add the rice and keep that for 3 mts
Then add 2 tspn ghee and remaining mint and coriander leaves and close the pressure cooker lid
Put the weight and allow for 3 whistle and switch off the stove
Garnish the briyani with fried cashew , bread pieces and serve with raitha.
