Thiruvatharai Special 7 Veg Kootu




Ingredients:
Chopped 7 vegetables

  • White Pumpkin - 1 Cup
  • Yellow Pumpkin - 1 Cup
  • Carrot - 1/2 Cup
  • Sweet Potato - 1/2 Cup or 2 small size
  • Mochai - 1/2 Cup
  • Broad Beans - 2 Cup
  • Vazhakkai (Plaintain ) - 1 no
  • Toor dal or moong dal - 2 tblspn
  • Salt  - to taste
  • Tamarind - small lemon size
  • or
  • Tamarind juice ( thick ) - 3tblspn
  • Sambar Powder - 1 tspn


To Grind:

  • Bengal gram - 1tblspn
  • Coriander seeds - 2 tblspn
  • Dry red chillies - 5 no
  • Grated coconut - 2 to 3 tblspn


For Seasoning:

  • Mustard - 1 tspn
  • Split Urad dal - 2 tspn
  • Asafoetida Powder - 1/4 to 1/2 tspn
  • Dry red chilli - 1 or 2
  • Curry leaves - few no
  • Oil - 2 tblspn

Method:

  • Cook the chopped vegetables in vessel along with 1/4 cup of water, salt in a pressure cooker for 2 to 3 whistle ( don't add more water little springle is enough)
  • Cook the dal until it becomes soft and keep it aside
  • In a vessel add tamarind juice with 2 tblspn water, sambar powder and allow to boil until raw smell goes
  • Fry the grind ingredients with 1 tspn oil and grind well in mixie
  • Heat 1-1/2 tspn oil in a kadai, add mustard after it burst add urad dal, red chilli, asafoetida powder, curry leaves and saute it when dal turns golden brown add the cooked vegetable, dal and grinded mixture and mix well keep it in low flame for 5 to 10 mins
  • Serve this 7 veg kootu with thiruvatharai special kali
