Bitter Gourd Poriyal



Ingredients:

  • Bitter gourd - 3 nos ( medium size)
  • Chilli powder - 3/4 tspn
  • Turmeric powder - 1/4 tspn
  • Coriander powder - 1/2 tspn
  • Amchur powder - 1/2 tspn ( optional )
  • Mustard - 1/2 tspn
  • Salt -to taste
  • Oil - 1 1/2 to 2 tblspn

Method:

  • Wash and cut the bitter gourd in to two halves then take out the seeds inside and the chop in to thin slices
  • Heat 3 tspn of oil in a kadai, add mustard after it pops out add the chopped bitter gourd and saute it for a minute
  • Then close the lid and keep in little bit high flame for 3 minutes inbetween open and stir it 
  • It starts to turn golden brown continue like this till 3/4 of the bittergourd turns golden brown , then add salt , chilli, turmeric,amchur powder,coriander powder and mix it well.
  • Saute it for a minute and then close the lid and keep in low flame for another 4 to 5 minute or more till the raw smell goes and colour changes to golden brown and becomes crispy
  • Inbetween add oil while stirring
  • Switch off the stove and serve the tasty bitter gourd poriyal as side dish for sambar rice, rasam and curd rice
Note:
  • After switch off the stove immediately don't transfer the poriyal to another vessel , all poriyal will get extracrispyness when it remains int he kadai till the heat persist ( don't clos it with lid it starts to sweat )
