Ingredients:
- Bitter gourd - 1/4 kg
- Fried channa dal ( pottu kadalai ) - 6 tblspn
- Coriander seeds - 1 1/2 tblspn
- Dry red chilli - 3 nos
- Turmeric powder - 1/4 tspn
- Tamarind juice - 1 tspn
- Salt - to taste
- Mustard seeds - 1/2 tspn
- Oil - for shallow fry
- Water - to cook bitter gourd
Method:
- In a empty pan dry roast the coriander seeds, fried channa dal, red chilli, then cool and powder it
- Add salt to the masala and keep aside
- Wash the bitter gourd dry it with clean kitchen cloth then make a slit on centre ( you should not cut in to two halves just open it ) and take out the seeds
- Boil water in a vessel add salt, turmeric powder, 1 tspn tamarind juice and bitter gourd
- Allow the bitter gourd to cook till it becomes soft ( for 5 to 10 mins , it should not over cook ) then drain the water and keep it aside
- Now fill the masala inside the bitter gourd and close it ( the moisture in the bitter gourd and fried channa dal helps in binding ) the masala will not come out . Fill all the bitter gourd with the masala and keep aside
- Heat 2 tblpsn oil in a kadai, add mustard when it pops out add the stuffed bitter gourd by placing slowly one by one and close the lid
- After 2 minutes turn it and cook other side likewise repeat the process till the whole bitter gourd change into little bit dark brown in colour
- Now add the remaining masala powder how much u want and saute it , after 2 mins switch off the stove Don't take the bitter gourd immediately , heat in the kadai will make it even more crisp.
- Serve the tasty stuffed bitter gourd with sambar, rasam and curd rice
Note:
- You can dry roast the garlic with the masala ingredients and powder it
- Along with the masala powder you can also add finely chopped small onion
- You can use this stuffed bitter gourd along with tomato gravy for chappathi side dish
